I’ve been making a variation of this salad for a while, and when I received my caviar limes from Fruitstand.com recently, I knew I had to use them in this! Fruitstand.com ships exotic produce right to your door, and the shipping is free! They only have one fruit at a time, depending on what’s in season, so you’ve got to grab it while you can! Their prices are great, and I think it’s fun to try fruit that you can’t find elsewhere.
If you’re not familiar with caviar limes, don’t worry. I wasn’t, either. But now that I am, I’m hooked! They’re also called finger limes because they’re shaped like a finger (about the size of your pinky), and you cut them in half and squeeze out the flesh to get these tiny crunchy balls bursting with lime flavor! They gave this salad a great texture.
Start by draining and rinsing a can of chickpeas. Then, add the rest of the ingredients for the salad and gently mix. I like to add my avocado at the end so it doesn’t brown, but the lime juice also helps prevent that.
Ingredients
1 can chickpeas, drained and rinsed
1/4 C diced sweet onion
1/2 C crumbled feta
2 avocados, diced
juice of 1/2 lime (use the whole lime if you don’t have the caviar limes)
salt and pepper to taste
caviar limes (optional)
Directions
1. Drain and rinse the chickpeas and put them into a medium-sized bowl.
2. Add the onion, feta, avocado, lime juice, salt, and pepper.
3. Gently stir to combine everything.
4. Garnish with caviar limes if available. Chopped cilantro is also a great garnish.
5. Serve right away or chilled.
